Chicken piccata

Chicken piccata

Piccata means : in spicy lemon sauce: describes meats sautéed in slices and served in a spicy lemon and butter sauce
Today we are trying chicken piccata, again a simple dish but satisfies everyones` taste
So, be ready to get the fame of a biggggg chef :)
We can serve rice, pasta or potato with this and I am opting rice
 

Ingredients

  • 1 boneless, skinless chicken breast halves
  • 35 gm grated Parmesan cheese
  • 20 gm flour
  • Salt and pepper
  • 45ml olive oil
  • 45 ml butter
  • 60 ml chicken stock or dry white wine
  • 30 ml lemon juice
  • 20 gm brined capers
  • 20 gm fresh chopped parsley
So now we have all the ingradients, here we go...........

1 Mix together the flour, salt, pepper, and grated Parmesan. Rinse the chicken piece in water. Dredge them thoroughly in the flour mixture, until well coated.

2 Heat olive oil and 2 tablespoons of the butter in a large skillet on medium high heat. Add  the chicken piece. Brown well on each side, about 4 minutes per side. Remove the chicken from the pan and reserve to a plate.


now the chicken is ready, now we need to make the sauce


3 Add the chicken stock, lemon juice, and capers to the pan. Use a spatula to scrape up the browned bits. Reduce the sauce by half. Whisk in a little of butter. Plate the chicken and serve with the sauce poured over the chicken. Sprinkle with parsley.

Those who want to try a different taste, replace the chicken stock with dry white wine
